Sofra Freekeh



Freekeh is an ancient whole grain originating in the Middle East. It’s a grain of which is picked while still green and then roasted giving it a beautiful smoky flavour.

Dvir’s top tips:

  • Sometimes the husks remain in the packaged freekeh. Before cooking it’s best to immerse the grains in water and the husks will float to the top and can be removed. Drain the washed freekeh (see note below) and cook for 15 to 20 minutes in plenty of cold water until tender but still has some bite. 
  • Allow to cool and mix with freshly chopped herbs, lemon juice vegetables or olives.
